I honestly don't have the opportunity to have this kind of diet lately but,I've done it before as a fast. its a really healthy diet but at the same time it would dangerous. i remember that i did it a while ago. We have be careful to feed ourselves with the correct food. The main point is not skip meals, follow the diet and drink a lot of water, at least that was what have helped me.
A typical daily menu would be something like this.
- BREAKFAST
- German Apple Pancake
- Strawberries (1 cup)
- Skim Milk
- LUNCH
- Leek, Asparagus & Herb Soup

Triple Celery Bisque - Quinoa & Black Beans
- Orange (1 large)
- Leek, Asparagus & Herb Soup
- SNACK
- Apple
- Skim Milk
- DINNER
- Curried Cashew Burgers
or
No-Bake Macaroni & Cheese - Orange-Infused Roasted Green Beans & Red Peppers
- Roasted Peaches

A RECIPE
Last week, we had a class, where we did a vegan recipe, which i really liked it because is one of my favorite fruit and that's mango. we had a Thai Class so we made a Green Mango Salad. This recipe consist with peanuts which really helped me when i did this diet, because has a lot of protein and energy.
GREEN MANGO SALAD
3 pcs Green mango, peeled and julienne
3 pcs Lime!fresh!(juiced)
60 ml Thai fish sauce
2 tbsp. Sugar
100 g Peanuts roasted
1 Stalk Fresh!lemongrass!(thinly!sliced!into!rings)
2 pcs Fresh Thai red chilies (deseeded and finely brunoised)
60! mL Vegetable oil
141 g Local red onion, sliced thinly
1 pc Red pepper, julienne!(soaked!in!cold!water)
1 pc Local carrot, peeled and julienne
4 pcs Local Boston Lettuce leaves, washed
½ Bunch Fresh cilantro, picked
First we have to Toast peanuts in oven and then peel and julienne carrot and mango. Slice the lemongrass and the chili. Make vinaigrette: whisking fish sauce, sugar, lime juice and oil together. Add lemongrass!and!chili. Add the Lettuce and mix everything together, put a side the vinaigrette and reserve until serve.
REFLECTION AND ADVICE.
The diet was really tough, and i was going to do it for 21 days but i quit in the day 17th because i love to much meats, i did really help me to understand vegetarian people and also to feel what they feel when they are involved on this daily. It's really hard to vegetarian and that's why that we as chef we have to understand that we have to do our best when cooking to those type of people, because they limit themselves, they are expecting something that would supply their needs. i would advice to feel passion of what you do, and if your are vegetarian you can specialized in this area and in that way, you can help people who are in the boat as you how? Creating new dishes and developing the old meals
To conclude, i can say that it was a really satisfactory experience but i wouldn't do it for the rest of my life. maybe i would do it for few days but not the whole time.
